Genuine question though, do we get screwed in the UK on energy prices or are the prices we are paying justified? If they can be justified, why are they so much higher than many other countries?

I think (sic) the answer to this is that prices are pinned to gas prices

Yes we do get screwed.

We are hoping to finish our project soon, probably spring next year. Hoping to take us off grid re energy dependency. We still will be connected, but hoping to have as an emergency fallback

No and yes. UK wholesale prices are comparable with other countries. UK consumers pay more because there is a load of other stuff lumped into the bill like green subsidies. Personally, I don't think that is terrible as it encourages energy efficiency.
